XO酱螃蟹粉丝煲
材料
"三点蟹 2只","冬粉 4把","洋葱 半颗","花椒油 2大匙","冷开水 450~500cc","蚝油 2大匙","砂糖 一大匙","盐 少许","XO酱 2大匙","米酒 一大匙","大辣椒 一支","姜末 一大匙","蒜末 一大匙","葱末 3大匙",
做法

1:螃蟹拨开壳后用牙刷仔细洗净,然后对切用刀背将蟹脚敲出裂痕。粉丝泡水软化后沥干备用;洋葱(大)切丝,辣椒切片备用

2:起油锅 放入一大匙花椒油将螃蟹放入稍煎一下变成红色即起锅。原锅放入半匙油、姜末与一半蒜末爆香,加入XO酱炒香

3:加入其余调味料,倒入约450cc煮滚(试味道)后,放入螃蟹块煨一下(约2~3分钟),螃蟹块盛起

4:放入冬粉炒拌均匀吸汁盛起,放入砂锅中。油锅放入少许油爆香剩余的蒜末、葱末、辣椒末

5:螃蟹摆在冬粉上后,淋上葱蒜辣椒末即可上桌~
