豉汁腐皮猪肉卷
材料
"里肌肉排 200g","腐皮 1片","小黄瓜 10g","红萝卜 10g","去籽黑枣 15g","蒜酥 10g","豆豉 40g","洋葱 20g","油膏 3大匙","辣椒 5g","葱 10g","水 5大匙","水 2大匙","盐 1/2t","糖 1/2t","胡椒 1/4t",
做法

1:选用里肌肉排为猪的上好部位,将其改刀成薄片,以味水稍加醃渍,备用。

2:蔬菜及去籽黑枣切条,取腐皮摊开,依序放上肉片、红萝卜、去籽黑枣、小黄瓜卷起,接口处涂抹面粉水。冷油放入腐皮猪肉卷,以140度油温炸三分钟,改180度炸两分钟(抢酥),捞起沥油,切块备用。

3:豆豉酱汁材料切小丁,蹈入豆豉爆香,再放入其他材料,中火煮至浓稠,盛起备用。
