做法

  1. step1

    1:把低筋面粉跟可可粉过筛,在把其余糖跟牛奶跟无盐奶油秤起来备用

  2. 2:依序加入分组一的蛋黄4颗打入盆内,糖(巧克力蛋糕就加60克,草莓蛋糕就加70克),牛奶60克,在把整个盆子放到秤子倒入35克的沙拉油,稍微搅拌一下后,边搅拌边慢慢放入过筛过的低筋面粉110克,最后在放入过筛过的无糖可可粉20克(草莓香料直接把整个盆子放到秤子上秤3克)搅拌均匀备用

  3. 3:接下来将蛋白打到稍微有粗泡后,慢慢放入糖(巧克力蛋糕就加75克,草莓蛋糕就加70克),打湿性发泡(搅拌器拿起来蛋白不会掉下去或搅动蛋白纹路不会很快消失就可以了)

  4. 4:将分解二的三分之一湿性发泡蛋白加到分解一的蛋黄跟料里切式搅拌后,把整个分解一的蛋黄跟料加到分解二的湿性发泡蛋白里搅拌均匀

  5. step5

    5:将无盐奶油15克放到微波炉稍微融化后,在倒入一个干净可以放到电锅蒸的盆子里,整个奶油稍微绕一下让底部沾满奶油,好让蛋糕蒸好后好脱模,把搅拌均匀的蛋糕陷料倒入奶油的这个盆内,之后把盆子包保鲜膜防止水气滴入蛋糕会湿湿软软不好吃影响口感

    6:电锅外锅2杯水,盖子不要全盖留一小缝透气
