塔香炒蟹脚
材料
"蟹脚 约800g","青葱 1根","蒜 3瓣","嫩姜 3片","辣椒 1根","九层塔 1把","沙茶酱 2大匙","辣豆瓣酱 1大匙","米酒 1大匙","糖 1小匙","白胡椒粉 1/2茶匙","乌醋 1大匙","水 60~80cc",
做法

1:洗净青葱切段、姜和蒜切末、辣椒切小段

2:蟹脚洗净,垫干净抹布盖上再用刀背拍裂(不要拍太碎)

3:热锅倒入油,待油温约150度时加入蟹脚先炸香(锅子可倾斜比较好炸),稍微炸1分钟捞起沥干备用

4:起锅热油后先将葱段爆香

5:加入蒜末及姜末续炒

6:再加辣椒炒香

7:加2大匙沙茶酱炒香

8:再加入辣豆办酱续炒

9:加入水后将调味拌匀,淋上米酒及糖调味

10:转大火快炒蟹脚,让调味料炒匀使其入味

11:倒入胡椒粉,最后加乌醋调味

12:加入九层塔,微拌匀10秒即可装盘
