红咖哩洋芋鲜虾
材料
"鲜虾 10~12只","洋葱 半颗","马铃薯丁 1颗","辣椒 1条","蒜末 2~3瓣","柠檬叶 2~3片","香茅碎 1大匙","香菜 1小把","米酒 1大匙","红咖哩酱 1.5大匙","椰奶 150ml","水 2大匙","二砂糖 1小匙","鱼露 1小匙","柠檬汁 2大匙",
做法

1:准备好所有食材,蒜切末,洋葱切片,马铃薯切细丁,辣椒切片,酱汁酱料备好待用

2:虾子洗净后,沿着虾背上方剪开剔除肠泥

3:热锅,倒些许油,放入蒜末煸香,放入鲜虾,呛一匙米酒香煎至虾变红

4:将虾取出盛盘备用,放入洋葱片、马铃薯,翻炒至洋葱熟软变透明状

5:加入辣椒、红咖哩酱,翻炒均匀炒出香气,再依序加入水、椰奶、二砂糖,柠檬叶、香茅碎以中火煮开后转小火,盖上锅盖焖煮约5分钟使马铃薯细丁熟软

6:放入鲜虾,淋上鱼露、柠檬汁,翻炒均匀再煮约2-3分钟使入味均匀

7:起锅前撒上香菜末拌匀即完成
