鲍菇芋粿
材料
"芋头 一条(1.5斤)","杏鲍菇 四根","绞肉 半碗量","地瓜粉 1米杯","水 2大匙","油葱酥 3大匙","香菜 少许","酱油 3大匙","五香粉 1/2茶匙","白胡椒粉 1/2茶匙","糖 3大匙","盐 1/2小匙",
做法

1:将芋头削皮后刨成粗丝,杏鲍菇拿两根切成条丝混入芋丝里,其余两根杏鲍菇先切细条再改切小丁,

2:取一炒锅,放少许油,放入绞肉炒散,加入杏鲍菇丁炒软,

3:加入酱油炒香,再加入油葱酥炒软,汤汁稍收干熄火盛出,

4:保留原空锅倒入芋丝,加入五香粉+白胡椒粉+糖+盐,用双手稍拌匀,后加入地瓜粉继续拌匀,

5:待干粉裹上后,加入少少量水在锅底,续拌到水被吸收后(看锅底没水份就OK),成芋头丝糊备用,

6:取一深型器皿,铺上烘焙纸(可防芋粿沾粘,比较好拿取),芋头丝填入抹平,再将肉燥铺上,就可移入蒸锅内,蒸30~35分钟,

7:熟透移出放凉后,再洒上香菜末,

8:要食用时,再切成小块就OK囉~^^
