煎猪扒配蜜糖黑醋汁
材料
"猪扒2块","洋葱1个","盐及黑胡椒适量","薯蓉材料:","新薯100克","淡忌廉20毫升","酸忌廉2汤匙","蒜粉1茶匙","洋葱粉1茶匙","盐及黑胡椒适量","蜜糖黑醋汁材料:","干葱1粒","意大利黑醋50毫升","蜜糖10克","红酒1汤匙","盐及黑胡椒适量 "
做法

1:洋葱去皮后切块

2:干葱切粒

3:用刀背轻拍猪扒,加盐及黑胡椒调味

4:将新薯洗净,蒸至新薯软腍后沥干,放在大碗内

5:用压薯蓉器将新薯压成蓉

6:加入淡忌廉、酸忌廉、蒜粉、洋葱粉、盐及黑胡椒,拌匀至滑溜质感,上碟备用

7:用中火烧热锅,加少许油,加入猪扒煎至两面金黄色

8:将猪扒推向锅边,锅中间加入洋葱炒至焦糖化

9:将洋葱及猪扒放在薯蓉上

10:用中火烧热锅,加少许油,炒香干葱,加入红酒及意大利黑醋煮至微滚

11:当煮至份量减少一半时,加入蜜糖拌匀,加入盐及黑胡椒

12:在猪扒上洒上蜜糖黑醋汁即成
