四川棒棒鸡
材料
"鸡腿 1只","姜 适量","葱 适量","绍兴酒 2汤匙","白芝麻粒","葱粒 适量","酱汁材料:","辣椒油 2汤匙","花椒 1汤匙","辣椒碎 1汤匙","镇江醋 2汤匙","甜豉油 1汤匙","麻酱 2汤匙","蒜蓉 1汤匙"
做法

1:姜切片,葱切段

2:煮沸一锅水,加入鸡腿、姜、葱及绍兴酒煮8分钟

3:熄火,盖上锅盖放置15分钟,或泡至鸡肉熟透

4:取出放凉,用木棍敲拍鸡腿至鸡肉松开,去骨并将鸡肉撕碎

5:用中火烧热锅,加入辣椒油,炒香花椒

6:将辣椒油过筛

7:加入辣椒碎、甜豉油、镇江醋、麻酱、少许热水及蒜蓉拌匀成酱汁

8:将酱汁及鸡肉拌匀

9:洒上葱粒及白芝麻即成
