我的烹大师时食飨宴 牛筋大根煲

材料

"牛肋条 300g","白萝卜 1条","牛筋 500g","毛肚 200g","红萝卜 1条","蒜 5粒","姜 5片","葱 2支","青蒜 1支","红葱头 5粒","牛肉卤汁葱 2支","牛肉卤汁姜 1大块","牛肉卤汁蒜粒 5粒","牛肉卤汁八角 3颗","牛肉卤汁陈皮 1大匙","大骨 2大块","烹大师风味 1小匙","酱油 1大匙","蚝油 1大匙","绍兴酒 1大匙"

做法

  1. step1

    1: 煮开一大锅水,汆烫牛大骨,牛肋条,牛筋,毛肚,去血水杂物再用水洗净沥干.

  2. step2

    2: 牛大骨两大块加入葱两支,姜一大块(拍碎),蒜粒5粒,八角3颗,陈皮1大匙注入水煮滚

  3. step3

    3: 再依序放入牛肋条,毛肚,牛筋(水盖食材即可)盖上盖子小火闷煮.

    4: 1小时后捞出牛肋条,1小时半后捞出毛肚,两小时半后捞出牛筋,食材待凉切块备用. 卤汤过滤,即为高汤. 白萝卜,红萝卜削去皮,剖半入水煮至半熟,捞出切滚刀块置于砂锅里.

    5: 炒菜锅爆香葱段,姜片,蒜粒,红葱头

    6: 再入牛肋肉,牛筋,毛肚拌炒片刻

  7. step7

    7: 入绍兴酒,蠔油,酱油,烹大师干贝风味及高汤

  8. step8

    8: 拌匀再整锅食材倒入砂锅,与萝卜同炖煮30分钟,掀开锅盖热气腾腾,撒下青蒜丝,上桌了!
