雪菜豆干肉丝炒面
材料
"猪赤肉(瘦肉) 200克","雪菜 50克","豆腐干(切片)2件","面饼 1个","红辣椒1只","鸡汤 100毫升","蒜蓉 2汤匙","麻油 1汤匙","生抽 1汤匙","砂糖 1汤匙","猪肉醃料:","绍兴酒 1茶匙","生抽 1茶匙","砂糖 1茶匙","生粉 1茶匙","胡椒粉 适量"
做法

1:将雪菜浸水20分钟,沥干后切碎。红辣切片

2:将猪肉切丝,加入绍兴酒、生抽、砂糖、生粉及胡椒粉醃15分钟

3:煮沸一锅水,加入面饼煮至散开,捞起过冷水,沥干备用

4:用高火烧热锅,加少许油,加入面条平铺煎至金黄色,将面饼翻面煎至金黄色及脆身,装盘

5:用中高火烧热锅,加少许油,炒香蒜蓉。加入猪肉炒至半熟

6:加入雪菜、豆腐干及鸡汤煮至微滚

7:加生抽、砂糖及麻油调味

8:加入红辣椒炒匀,然后淋在面饼上即成
